So true!! Rhubarb needs to be given a chance! My grandmother stewed it and loved serving it over ice cream.....so simple and delicious! It's one of our favorite spring ingredients!
Absolutely!! Before you freeze, trim the ends, remove the leaves, then cut into thirds (or whatever size best fits your recipe....for jam you'll want small pieces). Then lay the rhubarb pieces on a sheet pan or small tray and freeze them in a single layer. Freezing them in a single layer will prevent them from all sticking together. Once frozen, add them to a container and store them in your freezer. We'd love to know how your jam turns out, so keep us posted!
